  • ATTITUDES AND BARRIERS TO IMPLEMENTATION OF THE SELF-MONITORING SYSTEM IN THE OLIVE INDUSTRY.

    Summary: The right of citizens as consumers to ensuring food safety has prompted global development and the implementation of HACCP, becoming a prerequisite for global food trade. In the European Union the model was prompted by the publication in 1993 of the Directive 93/43/EEC of the Council to the development of the White Paper on Food Safety. The purpose of the Doctoral Thesis is to investigate attitudes and barriers in the design and management of Self-Regulation System (HS) of the olive business. This raised a literature search strategy based on a standardized index bibliométrico, we explored the level of knowledge and training needs of staff responsible for managing and maintaining the system. It also conducted a strategic study in the olive sector based on a SWOT analysis (Weaknesses, Threats, Opportunities and Strengths) with respect to the design, implementation and management of SA. A pilot study was raised, observational, quantitative and olive cross in 55 companies among the 75 companies within the Sanitary District Jaen that met the inclusion criteria of having been declared under the theory of his system by the Self Health Authority in accordance with the established legal procedure, producing a response rate of 100%. It was designed and used a previously validated questionnaire administered by piloting through personal interview conducted by two trained interviewers. The questionnaire collected aspects of the socio-economic structure of the mills, with the expertise and facilities related to the SA, barriers for the implementation of SA and the education and training on the SA. In conclusion the survey and SWOT analysis were two fundamental tools that could lead mills to define their strategies for food security in terms of their SA, while identifying barriers and opportunities were identified on the basis of opinion of those polled and anál
